Simple Honey Mustard Chicken Thighs

what you need:
  • 6 skinless, boneless chicken thighs
  • 1/3 cup Landsberg Hot German Mustard
  • 1/3 cup honey
  • dash chipotle pepper
  • 1/2 teaspoon salt
  • few dashes black pepper
  • fat of choice
  • 1 small onion, sliced
what you do:
Mix all ingredients except chicken thighs in a plastic bag or dish. Add chicken thighs and mix well so all thighs are covered with marinade. Place in refrigerator for 5 to 6 hours. Less will work, too, but the longer you let them marinade the better.
After thighs have marinaded a sufficient amount of time grease an oven safe dish with fat of choice. Place sliced onion in bottom of dish and chicken thighs on top of onions. Bake in pre-heated 375 degree oven for roughly 45 minutes or until chicken thighs have reached an internal temperature of at least 180 degrees.

We  normally don’t eat potatoes but we had people over for dinner the night I made these. So I served the chicken thighs with baked potatoes and broccoli and carrots roasted in butter with garlic. Unfortunately I forgot to take a picture of everything.
